I guess it’s been quite a while since I posted! Actually based on the pictures in the last post, we have moved twice since the last post. Since Facebook entered my life, I have been stuck there. Once I began working, about 10 weeks ago, the thought of blogging has entered my thought process again since it is part of my job.

Our family has gone through several transformations during the past 3 years since I quit blogging.

1) In February of this year, our family moved to Thomaston, GA.

2) After 12 years of being a self-employed, stay-at-home, homeschool mom, I re-entered the workforce.

3) Gracie is attending school again at a local, Christian, private school.

4) We added 6 laying hens to our long list of pets.

5) And last but not least, we are beginning the process of becoming foster parents. After praying for the last 10 years for more children, we believe that God has clearly shown us the direction we are supposed to go. We are still very early in the process, but we hoping to be able to get our first child around Thanksgiving. As Gracie said the other day, “This is going to be the best Christmas EVER!”

Trying Not to Float Away!

It all began this morning about 1am with the first tornado watch. Since then it has rained cats, dogs, rabbits, goats, cows, <enter any other animal name here!>.

Monday Meal: Sweet & Sour Baked Beans

I was looking for a really good baked beans recipe to take to a pool party. Since we weren’t going to be eating immediately, I really wanted some I could make in the crock pot. They were so delicious! Everyone just kept talking about how good they were!

I modified the original recipe quite a bit so I’m just going to give the final recipe.

Crock Pot Sweet & Sour Baked Beans

8 slices of  bacon
1 large onion, chopped chunky
½ c. brown sugar
½ c. cane syrup
1 tsp. dry mustard
½ tsp. garlic powder
onion powder, to taste
½ c. apple cider vinegar
2 – 16 oz. cans of kidney beans
3 large cans of Bush’s Maple Cured Bacon baked beans
salt and pepper

Fry bacon until crisp. Drain bacon, retaining some of the fat. Cook onion in remaining bacon fat, until tender (but not brown). Crumble bacon and set aside. Stir brown sugar, mustard, garlic powder, salt, pepper, onion powder, and vinegar in with the onions. Cover and allow to simmer for 15 to 20 minutes.

Drain kidney beans. Add these to baked beans and maple syrup in crock pot. Add onion mixture and crumbled bacon. Cook 3 to 5 hours in covered crock pot on low heat.

Notes:

I cooked this in a 6 qt. crock pot and it was FULL. My kidney beans were still a tad on the crunchy side for my liking, but no one else seemed to mind. When I got home from the party, I boiled 2 hotdogs and made Phil 3 plates of pork & beans for freezer meals.

Family Update

I figured it was about time for a family update again since I’ve been on blogging hiatus for a while. Here’s what going on with us.

Gracie – started school a couple of weeks ago, made a 100 on her first math test, says her favorite subjects are geography and spelling, ready to start dance in 2 weeks, AWANA starts back next week, have seen GREAT improvements in her reading and swimming skills over the summer, soccer starts in a couple of weeks, hopes to make the swim team next spring at the ripe old age of 7!

Phil – he’s just Phil, works like crazy, finally on some what of a schedule with work, loves to aggravate Beth (by the way Beth, Everybody’s got a water buffalo AND a baby kangaroo!)

Me – just staying around the house, cleaning, cleaning, oh and did I mention cleaning, working on several websites right now with a couple more in the wings, getting ready to go to Women of Faith in Atlanta in September, trying to get some inspiration for some cards so that I can start my own Etsy shop, getting ready for the biggest wedding of the year, trying to get a plan together for vacation, volunteered to coach Gracie’s soccer team (because I sit around and eat bonbons all day!), on call with the Red Cross, getting ready for my 10 yr. class reunion in September, nothing really!

DID I MENTION WE ARE LEAVING FOR CHICAGO 3 WEEKS FROM TODAY??????

Going Green?

Up until recently, I have resisted the whole “going green” movement. I have considered it all a bunch of hogwash. I have always had certain standards for what I wanted out of life. I am a “here and now” kind of gal and have never looked at prices in the grocery store. If I was craving something, I would buy it. Lately, I have noticed that the price of groceries (AND everything else!) continually on the rise. I began looking at things I could do to pinch a few pennies here and there. Here are a few things I’ve found:

1) napkins & paper towels – I have been spending about $20 a month on paper towels and napkins. That’s a half a tank of gas in my shiny, red sports car! While the occasional paper towel is not a bad thing, when they are in our house they’re going to be used and generally in excess. The solution I’m working toward is going to all cloth napkins. I’m still working on the cost effectiveness of buying them vs. making my own. I am hoping to make or buy enough for a about 4 days to start us off. Once a meal is finished, we will drop our napkins into a bucket of water and soap solution (very much similar to what you do with cloth baby diapers) to keep stains from setting in until they can be washed. To replace the paper towels we use, I purchased some terrycloth washcloths on a clearance rack at Wal-Mart 15 for $2. I purchased 2 packs of them. I am going to use half of them for cleaning and the other half for kitchen use (setting a spoon on while I’m cooking, etc.)

2) household cleaners – When I began looking at the prices of household cleaners I was using, I was astonished! I admit that previously I was all about the new and the latest, especially when it came to cleaners. I was buying the Mr. Clean wipes, the Clorox toilet scrubbers (the heads with the cleaner built in), the Clorox bath scrubbers (ditto), the Swiffer Wet Jet (with all the different solutions for the different types of floors in our house), the Swiffer dusters, etc. not to mention all of the cleaning products under my sink. There was Clorox spray, the professional window cleaner I use, several bottles of citrus cleaner, toilet bowl cleaner, Barkeeper’s Friend, De-solve-it, and I could go on for an hour. Every time I use the harsh chemicals, I wake up the next morning with a stuffy nose and barely able to breathe. After a lot of thought and research, I discovered that there were recipes out there on the internet on how to make your own household cleaners, dish washing liquid, dishwasher liquid, laundry detergent, etc. While all off that looked very interesting, I found something else at Wal-Mart that seemed to make a little more since to me. Clorox has come out with a new product called Green Works. The Green Works line has several products in it, but the one that has caught my eye is the natural dilutable cleaner. It’s sold at our Wal-Mart for about $2.85 and it makes over 10 gallons of solution. I’m not really sure, but I don’t think I can use baking soda and vinegar for that cheap. The best thing to me is that is has a very pleasant smell. Things smell clean without being overpowering.

Those are my 2 biggest things right now, but I’m sure there will be more!
